Fresh Mint & Cucumber Raita

Ingredients

SERVES 4-6

  • 250g/9oz natural yoghurt
  • Half a medium cucumber, peeled, deseeded & grated
  • 1cm or 1/2 inch piece ginger root, peeled & grated
  • A small handful of mint leaves, finely chopped
  • ¼ teaspoon roasted ground cumin
  • ¼ teaspoon ground black pepper salt

 

 

Method

Whip the yoghurt with a fork until smooth. Combine the whipped yoghurt with the remaining ingredients and chill in the fridge until ready to serve.
