In the cooler temperature of the hills of Kashmir, aromatic saffron tea is brewed to ward off colds. The clear golden nectar is poured over flaked almonds. As a variation on the recipe, you can add 2 teaspoons of green tea leaves to the liquid halfway through the brewing time.
Combine the water ,saffron, cinnamon in a saucepan. Bring the water to the boil, then the reduce the heat, cover the pan and gently simmer for 10 minutes.
To serve, add a teaspoon of flaked almonds to each cup and pour the tea on to. Sweeten with honey to taste.
