Lassi

This creamy yoghurt-based drink is deliciously cooling on a humid day and can be made sweet with the addition of fresh fruit, rose water and cardamom, or savoury with salt, ground cumin and fresh mint.

MANGO / BANANA LASSI

To make a sweet fruity lassi, blend 3 ripe bananas (or fruit of your choice) in a food processor with 350g/10oz full-fat natural yoghurt, 1 dessert spoon of honey, 1 table spoon of rose water & ½ teaspoon ground cardamom, until smooth. Add 275 ml ½ pint cold water & blend until frothy. Serve poured over ice.

SALT LASSI

SERVES 4-6

Ingredients

  • 500g/ 01 lb 2oz full- fat natural yoghurt
  • 275 ml/ ½ pint cold water
  • ½ teaspoon ground cumin
  • Salt

 

 

To Serve: Ice, Garam Masala, Fresh Mint Leaves.

Blend all the ingredients together in a food processer until frothy. Pour into glasses over ice and garnish with a pinch of garam masala and fresh mint leaves.
